Ingredients

15-oz. can of pumpkin
3 cups heavy cream (divided)
¾ cup sugar
½ tsp. pumpkin pie spice
3 Tbsp. dark rum
½ tsp. vanilla extract

Garnishes

Whipped cream
Roasted pecans
Nutmeg

Directions

  1. Combine the pumpkin, 1 cup of the heavy cream, sugar, pumpkin pie spice and rum in a deep saucepan. Simmer mixture over low heat for 10 minutes, stirring occasionally. Cool completely.
  2. Whip the remaining 2 cups of heavy cream and vanilla to soft peaks. Carefully fold cream into the pumpkin mixture.
  3. Spoon mixture into parfait glasses. Refrigerate for at least an hour.
  4. Garnish before serving.
