Ingredients

Nonstick cooking spray
1 package prepared piecrust (contains 2 crusts), thawed according to package directions
2-in. circle cutter
3 cups pie filling (we used about 1½ cans of filling, 14.5 oz. size)
1 egg
Sugar for sprinkling

Directions

  1. Preheat oven to 425°F.
  2. Spray 2, 12-cup mini-muffin pans with nonstick spray.
  3. Unroll piecrusts onto a lightly floured surface. Cut 2-inch circles, dipping the cutter into flour first to avoid sticking.
  4. Press each 2-inch circle into a muffin cup.
  5. Add 2 tablespoons pie filling to each piecrust.
  6. Cut remaining crust into shapes or strips. Top pies with crust shapes.
  7. Beat egg with 2 tablespoons water and brush top crusts of pies. Sprinkle with sugar.
  8. Bake pies for 10 minutes. Allow to cool.
