Classic Chicken Parmesan

Classic Chicken Parmesan is one of those dishes that seems fancy but really isn’t hard to make. Thin, crispy chicken cutlets in tomato sauce and cheese…it’s all the best comfort foods in one delicious dish. Add a loaf of French bread and open a bag salad, and dinner is ready for any friend in need.

Ingredients

4 boneless, skinless chicken breasts cut into thinner cutlets, pounded to about ¼” thick
¾ cup seasoned bread crumbs
1 egg
Sea salt
¼ pound mozzarella cheese
¼ pound smoked provolone cheese
1 cup grated Parmesan cheese, divided
1½ cups jarred marinara sauce
4 Tbsp Olive oil
1 Tbsp butter

Directions

  1. Preheat the oven to 350F.
  2. Beat the egg in a shallow dish. In a second shallow dish, combine half the Parmesan cheese and the breadcrumbs.
  3. Dip a chicken breast piece in the egg then coat completely with breadcrumbs and set aside on a sheet pan. Repeat with each piece.
  4. Heat a large skillet over medium-high heat. Add two tablespoons of olive oil and a half-tablespoon of butter and swirl to melt and coat the pan. Place half of the chicken in a single layer and cook until golden on both sides, about three minutes per side. Set on paper towels to drain and repeat with the remaining olive oil, butter, and chicken.
  5. In a casserole, layer as follows: half of the marinara sauce; chicken cutlets; mozzarella cheese; smoked provolone; and the rest of the tomato sauce.
  6. Cook uncovered for 30 minutes.
