- Preheat the oven to 350°F. Combine the Italian seasoning, dried thyme and dried rosemary.
- Oil a baking sheet, and place the fillets a few inches apart. Brush each one with 1 tablespoon olive oil, followed by 1 tablespoon lemon juice, ½ teaspoon salt and ¼ teaspoon pepper. Divide the combined herbs into 4 portions, and cover the top of each fillet with the mixed dried herbs.
- Bake for 10 to 15 minutes, or about 10 minutes for each inch of thickness of the fillet. Fillets are done when the fish flakes when tested with a fork.
