Warm kale salad

Warm kale salad with bacon dressing and bacon pieces in a serving bowl.

Kale is a superfood and people love bacon. It's a match made in heaven. This warm kale salad with bacon dressing is the perfect dish for a fall family gathering. Pumpkin seeds provide a little fall crunch on top of hearty kale leaves, along with some creamy goat cheese crumbles.

Ingredients

6-7 cups chopped kale leaves
4 strips of bacon, cut into small pieces
1 Tblsp olive oil
1 shallot, diced
1 tsp brown sugar
1 Tbsp Dijon mustard
2 Tbsp cider vinegar
¼ cup goat cheese, crumbled
¼ cup pumpkin seeds
¼ cup dried date pieces

Directions

  1. Wash kale, remove stems, and thinly slice leaves.
  2. Cook the bacon pieces until crispy in a large skillet over medium high heat. Remove cooked bacon bits to a paper-towel-lined plate.
  3. Add olive oil to the remaining bacon grease and sauté the shallot until softened.
  4. Add the Dijon mustard, brown sugar and cider vinegar.
  5. Add the chopped kale, and turn in the pan until slightly wilted.
  6. Remove to platter and top with dates, pumpkin seeds and crumbled goat cheese.
