In this easy bruschetta recipe, toasted baguette slices are topped with a light and lemony ricotta mixture and garnished with thinly sliced fresh basil and lemon zest to make a delightful dish your guests are sure to love.

Ingredients

1 baguette, sliced into 6 thin slices and toasted
1 garlic clove, peeled
1 cup whole milk ricotta
¼ cup preserved lemon, finely chopped (recipe below)
¼ tsp. fresh ground black pepper
1 Tbsp. fresh basil, thinly sliced
1 Tbsp. fresh lemon zest
Fresh ground pepper
Olive oil

Directions

  1. Rub toasted bread with garlic clove and set aside.
  2. In a small mixing bowl, blend together ricotta, preserved lemons and black pepper.
  3. Spread on prepared baguette slices.
  4. Before serving, top with basil, lemon zest, black pepper and a drizzle of olive oil.
