Vanilla cheesecake

Ingredients

For the crust and filling

1½ cup vanilla wafer crumbs
¼ cup butter, melted
1 cup sugar, divided into ⅓ and ⅔ portions
16 oz. cream cheese, at room temperature
Dash kosher salt
2 eggs, lightly beaten
½ tsp. vanilla

For sour cream topping

1 cup sour cream
3 Tbsp. sugar
1 tsp. vanilla

Directions

  1. Preheat oven to 350°F.
  2. In a medium-size bowl, mix together vanilla wafer crumbs, butter and ⅓ cup sugar.
  3. Press into the bottom of an 8-inch springform pan.
  4. Bake in preheated oven until set, about 8 to 10 minutes. Cool on a wire rack while making filling.
  5. In the bowl of an electric mixer, beat together cream cheese, ⅔ cup sugar, salt, eggs and vanilla until completely smooth, about 5 minutes.
  6. Pour over vanilla wafer crust and bake for 30 minutes. Turn off oven and allow cheesecake to cool in oven to prevent cracking on surface, about 1 hour.
  7. After cheesecake has cooled, remove from oven, cover in foil and refrigerate for at least 4 hours or overnight.
  8. Carefully remove chilled vanilla cheesecake from springform pan. Use a small, offset spatula around the edges to help sides from sticking.
  9. In a small bowl, make sour cream topping. Mix together sour cream, sugar and vanilla, spread over top of cheesecake, and serve.
