Lemon meringue cookies

Light, fluffy lemon meringue cookies with sugared blueberries on top.

These lemon meringue cookies dress up any occasion and will make you look like an expert cookie maker. These dreamy cookies feature soft folds of white meringue with creamy lemon custard filling and have just the right amount of sugared blueberries delicately resting on top. Even the most regal cookie lovers will be impressed.

Ingredients

For the meringue shells

3 large egg whites
⅛ tsp. cream of tartar
¾ cup sugar
½ tsp. vanilla extract

For the lemon custard

1 cup prepared lemon curd (We like Tiptree Lemon Curd.)
1 cup whipping cream

For the sugared blueberries

½ pint fresh blueberries
1 egg white, lightly beaten with 1 tsp. water
½ cup sugar

Directions

To make the meringues

  1. Preheat oven to 250°F. Line a sheet pan with parchment paper. Using a 4-inch-round biscuit cutter, trace 6 circles onto parchment for shaping meringue.
  2. In the bowl of an electric mixer, beat egg whites with cream of tartar until soft peaks form. Slowly add sugar, beating well after each addition. When stiff and glossy peaks form, beat in vanilla.
  3. Using a large spoon, divide meringues between parchment circles and form nest-like shapes. Bake for 45 minutes. Turn off oven and leave meringues in oven for another 45 minutes.
  4. Cool on a metal rack for 10 minutes, and then carefully remove from sheet pan and continue cooling on wire rack.

To Make Lemon Custard

  1. Place prepared lemon curd in a large bowl.
  2. In the bowl of an electric mixer fitted with a whisk attachment, beat whipping cream until soft peaks form.
  3. In two batches, fold in whipped cream to the lemon curd until just incorporated. Refrigerate until ready to use.

To Make Sugared Blueberries

  1. Line a plate with a paper towel.
  2. Create an assembly line by lining up blueberries, egg white and sugar. Working with several berries at a time, dip berries in egg white and then roll in sugar.
  3. Let berries dry for 15 minutes on paper towel before using.

Fill each meringue with about ⅓ cup lemon custard. Sprinkle with sugared blueberries and serve.
